The video shows how, from a big stack of plates, the guy rapidly gets to the end while, in an almost robot-like manner, he wipes each of them and sends them into the sink. Luckily for him, nothing breaks in the process and all the dishes make it safely in the water basin.
As amazing as it looks, it is also a bit confusing when you think about the sanitary issues and the fact that every plate is whipped once and then thrown into a sink filled with water, and that's all. Then you just get them all out and dry them, and they are good for the next dish.
I believe there is a bit more to washing dishes than one wipe and a quick throw in the water. I can't deny the guy is fast, like really fast, but I won't eat off that plate. Quality tops quantity, at least in my opinion.
