SubliMotion will delight diners with a $2,000 (€1,440) exclusive menu

SubliMotion is the new most expensive restaurant in the world and is described as an “unparalleled gastro-sensory venture.” It will debut in June, at the new and exclusive Hard Rock Hotel, located on Playa d’en Bossa, a major holiday resort in Ibiza.

The restaurant only seats 12 guests at a time, but clients who dine there will experience an incredible gastronomical feast. They will be served elaborate 20-course meals at a whopping cost of $2,000 (€1,440) per head.

According to Oddity Central, chef Paco Roncero is behind the five-star resort’s exclusive concept, and he promises that the new venue will combine music, lighting, ambiance and food to create a complete experience for all the senses.

“What is SubliMotion? It’s hard to explain. Ibiza, passion, gastronomy. A radically different show you can only experience for yourself,” chef Roncero says in the restaurant’s promotional video, which you can watch at the end of this article.

Guests will be welcomed in a unique space with walls that create a virtual light show. Moving pictures are also projected on the tabletops, and the animations change depending on what food is served. The entire décor is controlled by an operator who closely watches what happens at the tables.

When it comes to food, the world's most expensive menu has yet to be revealed, but it will reportedly provide a “complete and unprecedented emotional experience” to all the diners.

“The dishes will cause a stir among the most neglected senses; from moments of humor, pleasure, fear, reflection and nostalgia, diners will be wandering through a world of sensations from the North Pole where they will enjoy a cold snack that they carve on their own iceberg or to the baroque Versailles where the elegance of a rose is sure to melt in their palate,” a spokesman for the restaurant explained.

Chef Roncero, who is one of Spain’s most famous chefs, explained that this project wouldn't have been possible without the help of managers at the Hard Rock Hotel.

“A project like this is impossible for one person to do alone. I’m a cook and what I know is cooking. I had to combine forces with other talented professionals who could contribute technology, design, study the role of the senses,” he said.

To make his customers happy, Roncero organized a workshop for his team of chefs at SubliMotion and spent over one year researching and creating exclusive dishes.

This type of modern cuisine, which combines food, emotion and technology, is already popular in Shanghai, where French chef Paul Pairet delights diners at his revolutionary restaurant Ultraviolet.
