The community has managed to circumvent the UEFI requirement

Valve has released SteamOS, but it's only compatible with UEFI PCs. The community took care of this problem and now a new version is available, skipping this particular requirement.

Since the release of SteamOS, a lot of users that didn't have UEFI on their motherboard have confronted with this problem. A solution has been posted on Reddit, by the user GamePad64, that is simple and straightforward.

How does it work? According to its developer, grub-efi has been replaced by grub-pc to drop UEFI dependency and apt-cdrom reposory has been rebuilt (Packages.gz and Release files).

Also, the default.preseed file has been edited to enable manual partitioning, and the ISO image has been created by using grub-mkrescue (it uses xorriso inside) with the original grub.cfg.

A magnet download link is provided in the author's original post, and users should have no problem installing the new version.
