Katherine Webb was first just Miss Alabama. She then became a viral star, and then a Sports Illustrated girl and a reality star. Today, she’s making a lot of headlines for telling People magazine she lives on a meager 1,120 calories a day.

Since she’s a model, no one probably expects her to gorge on calorific treats on a regular basis but, even so, her admission to the celebrity mag that she’s living mostly on fruit and veggies still managed to shock many.

“It's all about self-control,” People quotes her as saying.

“I cut out any type of bread product, and cake, cookies, bagels. When I eat a lot of sugar, I tend to bloat more,” Katherine says.

She does allow herself a treat every once in a while, saying she usually goes “for all-American buffalo wings and French fries.”

People also writes that Katherine starts the day with a fresh smoothie for breakfast. She has spinach salad with almonds and strawberries for lunch, and grilled chicken fingers with sweet potato fries for dinner.

She also has two daily snacks, an apple in mid-morning, and a frozen yoghurt bar in the afternoon.

That she’s included snacks in between meals is an excellent thing, nutritionist Haylie Pomroy says for the same publication, but Katherine is definitely eating too little to describe her diet as “healthy.”

“Katherine does an amazing job eating three meals and two snacks, fueling her metabolism. [But with her workout schedule] she could add at least 600 more healthy calories,” Pomroy says.

The nutritionist is speaking of Katherine’s admission that she does a lot of cardio and weight training to burn fat and keep in shape.

As the above story went international, Katherine took to her Twitter to – strangely – deny it. “No way I only eat 1100 cals a day! I love chocolate too much!” she writes.

Whether she’s saying People misquoted her on purpose or that it was an honest mistake, we can’t tell. She’ll probably explain it better soon.
