This change in the ultrasonic waves registers the position of the touch event and sends this information to the iPhone's screen for processing."

In short, the touch screen panel is coated with this special material that conducts a continuous electrical current. Since the human body also stores electrons, as the company explains, it therefore also exhibits capacitance.
