Ten years ago, the owner of Dabusco’s Pizzeria Michael Scotto decided to carry out a culinary experiment in his attempt to attract more customers on St. Patrick’s Day.

He added lime-colored food dye to the dough and cheese used to prepare pizzas, creating tasty and unique dishes to honor the Irish. Customers were really impressed.

Currently, the Italian eatery in East Windsor is serving up green pies, pizza, calzones and garlic knots, all painted in green, to celebrate St. Patrick’s Day, which has become one of the busiest days of the year.

According to N.J. News, Scotto even renames the restaurant O’Dabusco’s on the holiday.

“People drive here from Union, from Cherry Hill. If people are having parties, they’ll order three or four pies. The pizza tastes completely the same even though your brain might play tricks on you,” the cook said.

Other eateries in U.S. also prepare special meals to celebrate Irish culture. For instance, at Pop Shop soda fountain in Collingswood, people can find green pancakes, while Catherine Lombardi and Stage Left restaurants in New Brunswick are serving a dignified Irish tasting menu. In addition, many Irish bars offer a variety of hued beverages, like green beer and green champagne.
