Pizza is, as we all know, one food that dieters can’t often indulge in, given its high calorie content. However, that should by no means signify that we shouldn’t enjoy it now and then – and even make the most of it by packing it full with healthy vitamins and fibers by adding vegetables to it, as the girls at FitSugar point out.

A quick meal does not necessarily have to mean an unhealthy one, it has been pointed out. In order to keep an eye on our figure and the daily intake of calories, we can go for frozen cheese pizza. It may be a bit “boring” served as such, but with a few vegetables on top, it can become quite a delicious and healthy treat. Moreover, it’s also very filling, which means we’ll be eating fewer slices. The secret is to sauté all the veggies using herbs, garlic and olive oils, and then to spread them on the pizza.

The best part of this do-it-yourself, vegetable-enriched pizza is that we can use virtually any veggie we happen to have in the fridge, from carrots, mushrooms, to broccoli, pepper, or spinach. Once the vegetables are done, we add them to the pizza and then bake it as usual. For a bit more taste, we can also use topping, but that depends entirely on the type of diet we’re on and the number of calories we’re supposed to have for each meal.

Even if it sounds like improvising and “playing with food,” this method is acknowledged for its many advantages. Even celebrities resort to it every so often when they feel like having a slice a pizza, but they don’t want it to show on their thighs and waist. Ashlee Simpson, for instance, has admitted to indulging in this guilty pleasure of eating pizza, even now that she’s on a diet to lose the baby weight.

Ashlee, as fans must know, gave birth in November 2008, but she’s already back to her previous weight, thanks to a workout routine that focuses most on spending time and playing with her baby, and to a healthy diet. However, Ashlee says, whenever husband Pete Wentz brings home pizza, she too has a slice or two, but only after she literally covers her in vegetables – this way, she can both satisfy a craving and continue to focus on her health.
