No update to the actual iOS binary is necessary, according to Google

Gmail iOS has gained the ability to send emails using alternate email addresses, despite a terse changelog saying that version 1.1.1 only delivers bug fixes.

Both the iOS application and the HTML5 web app now allow users to choose “From” their available address when writing email.

The new ability has nothing to do with the latest update delivered to the iOS client in February, hence the inconsistency with its release notes. In other words, the change is on the server side. Users should expect to see the new feature soon on their devices, according to the Mountain View mammoth.
