Healthy and exquisitely tasty hors d'oeuvre

Whether we’re at a fancy dinner or just amongst friends, all those appetizers that are literally being thrown at us are too good to pass up on. We may not realize it, or deliberately try to deceive ourselves, but all those snacks, as tiny and apparently harmless as they might be, can do serious damage to an even not that strict diet. Of course, since the option of not eating them at all is out of the question from the very start, today, we’ll see a recipe for an appetizer that is as delicious as it is healthy: blue cheese wafers.

 

Ingredients (for 36 wafers/cookies):

 

- 1/2 cup unsalted butter, softened at room temperature;

- 8 ounces finely crumbled blue cheese;

- 1 cup flour;

- 1/2 cup walnuts, finely chopped;

- a pinch of salt;

- a pinch of black pepper.

 

Preparation:

 

Put the blue cheese and the butter in a large mixing bowl, and use the mixer to beat them until smooth. Add the flour, the walnuts, and the salt and pepper to the composition and mix some more, until all ingredients are well-combined into the dough. Once done, take the dough out, divide it in equal parts, and roll it into two "logs." Wrap the rolls in plastic and refrigerate overnight for all the ingredients to better settle in. If you’re in a hurry and haven’t got all night, a few hours in the fridge should work just fine as well.

 

Take the logs out and, with a sharp knife, cut each in 18 pieces. Preheat the oven to 375 degrees F and place the dough on cookie sheets, which you have previously sprayed with nonstick cooking spray. Make sure you leave enough space between each round of dough, and then place everything in the oven for 11 minutes or so, or until the cookies become slightly brown.

 

Place the cookies on a cold rack, and serve at room temperature accompanied by either vegetables or a glass of red wine. That’s it – easy to make and healthier than most snacks out there, the blue cheese wafers are sure to be a hit.
