Apple today slashed a substantial $300 off the original retail price of its previous-generation Mac mini equipped with a 2.0GHz Intel Core 2 Duo processor, and $250 off the price of a Mac mini with Snow Leopard Server (2.53GHz Intel Core 2 Duo) to sell them for $499 and $749 respectively.

As we spot sub-$1,000 offerings at Apple's (online) store, we’re more than glad to report the findings, and this time is no different.

We’ve found that Cupertino is trying to get rid of three pre-owned Mac minis offering them at Special Deal prices.

The deals start at $499 for the refurbished Mac mini 2.0GHz Intel Core 2 Duo with 2GB of standard memory, a 320GB hard drive, a built-in 8x SuperDrive (DVD±R DL/DVD±RW/CD-RW), and NVIDIA GeForce 9400M graphics with 256MB memory.

This offer saves the buyer a good $300 (or 37% off), Apple claims.

Next up, another Mac mini can be bought at a discount, although Apple doesn’t specify exactly how much the customer saves on this purchase.

The refurbished Mac mini equipped with a 2.66GHz Intel Core 2 Duo processor costs $719, and ships with 4GB of memory, 320GB of storage capacity, has the 8x SuperDrive (DVD±R DL/DVD±RW/CD-RW), and the same NVIDIA GeForce 9400M graphics with 256MB memory.

Finally, those who are looking for a reliable server solution can opt for the 25% cheaper refurbished Mac mini with Snow Leopard Server priced today at $749.

According to Apple, you save $250 on this purchase.

The desktop computer is Intel-based (Core 2 Duo), clocked at 2.53GHz, and comes with 4GB of standard memory.

Replacing the optical drive is a second storage unit which brings the total storage capacity to 500GB (two hard drives).

Graphics wise, the Server Mac mini boasts the same NVIDIA GeForce 9400M solution with 256MB of memory.

The system comes pre-loaded with Apple’s Mac OS X Server Snow Leopard operating system.
